Definition: Enzymes isolated from bacteria that recognize specific sequences in DNA and then cut the DNA to produce fragments, called restriction fragments.
Context: A difference in the nucleotide sequence of the sixth codon of the beta-globin gene between HbA and HbS, resulting in the substitution of valine for glutamic acid along with the recognition site nucleotide sequence of the restriction enzyme Mst II, produces a 1.3kb restriction fragment with a probe to the 5’ end of the beta-globin gene in DNA from persons with the sickle-cell gene rather than a 1.1 Kb fragment with DNA from the normal beta-globin gene.
